Kitchen hood suppression systems use a wet chemical agent specifically formulated to cool the fire, suppress vapors, and prevent re-ignition.
How Kitchen Hood Suppression Systems Work
These systems are installed directly into the exhaust hood above cooking equipment (fryers, ranges, griddles, char-broilers) and are connected to nozzles positioned over each individual appliance. When triggered — either automatically by heat detection or manually via a pull station — the system:
- Shuts off the gas or electrical supply to the cooking equipment
- Discharges wet chemical agent directly onto the fire and cooking surfaces
- Coats surfaces to prevent flare-up or re-ignition
NFPA 96 and Testing Requirements
Kitchen hood suppression systems fall under NFPA 96 and are required to be inspected and serviced at least every six months — more frequently for high-volume cooking operations. This isn’t optional: most local fire codes and insurance policies require documented semi-annual service, and an out-of-service kitchen suppression system can shut down your ability to legally operate.
